Tasting Notes
The Chardonnay exhibits a bright lemon colour and offers perfumed notes of fresh lemon peel, nectarine, white peach, and vanilla. The palate is medium-bodied, showcasing a balance of ripe stone fruits and bright citrus, with flavors of white peach, nectarine, and kaffir lime. The finish is fine-grained brioche, cream, and spiced oak complexity. The 2025 vintage maintains these characteristics, reflecting the vibrancy and purity of the variety in the Hunter Valley.

The bright acidity and stone fruit flavours make it a versatile pairing for various dishes. It complements seafood such as grilled prawns or lobster, poultry dishes like roast chicken, and creamy pasta dishes. Technical Notes
Vineyard
The 1.77ha of Estate Chardonnay vineyards established in 1985 were hand harvested, sorted and then allocated based on quality. The Chardonnay harvest began on the 15th of January followed by the Block 2 and Block 4 Semillon on the 19th of January. These ideal conditions provided excellent ripeness and primary fruit characters for both varietals.
Production
The Chardonnay was basket pressed then put to stainless steel tank to begin the first fermentation. The juice was then transferred to new and old French oak Barriques where it was left to mature, build complexity and texture for 10 months before allocation and bottling.
