Technical Notes
Vineyard
Exclusively block 3 Semillon from the estates single vineyard planted in 1985, situated on a north facing slope, with predominantly red clay soil and a few millimetres of sandy loam top soils. The vines are planted in a vertical shoot position to allow ample sunlight into the canopy. Consistently producing the purest and brightest signatures of Hunter Semillon.
Production
Hand harvested from the old vines at sunrise to ensure the fruit is picked at the coolest part of the day. Whole- bunch pressed to minimize phenolics and then put to stainless-steel tank to begin fermentation. The juice is fermented to 3g/l residual sugar, then the wine in vat is left on lees for 3 weeks to build texture and complexity into the finished wine.
