Our Cabernet Sauvignon is planted on an elevated slope that is rich in red loamy and limestone soils. The historic vineyard is low yielding and consistently of the highest quality. The assemblage of the top tier French oak barriques occurs after the Cabernet Sauvignon has been matured for 10 months to offer softness to the ripe primary fruit and to gain complexity. The Cabernet Sauvignon displays concentrated black forest fruits with fine grain tannins to the fore.
Intense aromas of black forest fruits, concentrated black olive and mulberry create a delicious, warm complexity in this Hunter Cabernet.

Technical Notes
Vineyard
The old vine Cabernet Sauvignon is hand harvested at low yields, with crop thinning and vine management allowing the canopy to be opened. This diligent attention to detail in the vineyard provides our vines with the best opportunity to produce excellent fruit quality and wonderful fruit flavour concentration.
The vineyard experienced an exceptionally dry growing season during the 2024 vintage. The very early budburst in late August. followed by long warmer days - the Vintage conditions throughout the Cabernet Sauvignon harvest were exceptional with the fruit showing excellent ripeness and balance.
Production
After Vat fermentation, the wine is matured for 10 months exclusively in premium French oak. Once bottled the wine rested in our climate-controlled cellar prior to its release on the 1st of June 2026
