The 'Jessica's' Botrytis Semillon was released for the first time in 1997. It is an alluring mix of lucious quince, vanilla giving way to rich sweet fruit, that's offset by refreshing acidity.
Botrytis Semillon has been produced at our vineyard since 1997. Our single vineyard on De Beyers Road in Pokolbin has a special site that sits lower and closer proximity to the old dam. Creating an ideal situation for making botrytis from 10 rows on block 2 and block 4 exclusively.
Tasting Notes
Vibrant citrus fruit, passionfruit, honey and nougat. This vintage is incredibly balanced across the palate. With luscious honey dew texture and fresh acidity to a long finish.

Technical Notes
Vintage
A dynamic season, with the perfect lead into vintage, heavy rain in January triggered the Botyrtis in the vineyard, followed by mild isolated storms in February and warmer air saw the botrytis spread across all the allocated Semillon vines.
Production
The fruit is hand harvested and gently crushed, then held overnight in tank to maximise flavour and sugar extraction. After clarification, the juice is fermented in tank with close monitoring, and the ferment is stopped once the desired balance of sweetness, acidity and alcohol is reached, followed by final clarification.
