Tasting Notes
This still youthful semillon is a subtle green quartz color with aromas of zesty citrus characters and green apple. Pronounced fruit qualities of juicy fresh squeezed lemon, passionfruit and guava supported by fresh acidity ensures a long length and refinement across the palate.
Aging
Drink now or cellar for 5 - 10 years.
Food Pairings
Freshly shucked oysters, lobster mornay or creamy light cheeses.
Technical Notes
Vineyard
Dry conditions leading into the 2013 Vintage produced low yielding vines that along with fruit thinning throughout the vineyard provided the perfect opportunity to produce intensely flavoured fruit. All grapes were hand harvested before the intense Hunter Valley rain in late January.
Production
The Semillon grapes have been whole- bunch pressed to minimize phenolics and then put to stainless-steel tank to begin fermentation and then the wine in vat is left on lees for 3 weeks to build texture and complexity into the finished wine. The wine is then bottled early to retain freshness and vitality of the primary fruit characters.
