Technical Notes
Vineyard
Our Semillon is hand harvested from vines grown in friable red duplex loam soil at Pokolbin in the Lower Hunter Valley.– the vines, planted in 1985 – consistently producing the purest and brightest signatures of Hunter Semillon.
Production
The Semillon grapes have been whole- bunch pressed to minimize phenolics and then put to stainless-steel tank to begin fermentation. The wine in vat is left on lees for 3 weeks to build texture and complexity into the finished wine. and is then bottled early to retain freshness and vitality of the primary fruit.
