Technical Notes
Vineyard
The old vine Cabernet Sauvignon is hand harvested at low yields, with crop thinning and vine management allowing the canopy to be opened. This diligent attention to detail in the vineyard provides our vines with the best opportunity to produce excellent fruit quality and wonderful fruit flavour concentration.
Production
After Vat fermentation, the wine is matured for 10 months exclusively in premium French oak. Once bottled the wine rested in our climate-controlled cellar prior to its release on the 11th of November 2025.
